What makes this creamy vegan dressing so vividly green? Avocado, parsley, chives, tarragon and culinary matcha. Matcha consists of stone-ground green tea leaves that can have a beneficial effect on blood sugar levels and fat metabolism.

INGREDIENTS

SERVES 12

  • 1 Hass Avocados
  • 1/3 cup Olive Oil, Extra Virgin
  • 1/4 cup Lemon Juice
  • 1/4 cup Parsley
  • 1/4 cup Chives, raw
  • 2 tbsp tarragon, fresh
  • 1 tbsp Tamari Soy Sauce
  • 2 tsp Powdered Green Matcha Tea
  • 2 clove garlic
  • 1/2 tsp Ground Black Pepper

DIRECTIONS

1 Remove seed and peel from avocado.
2 Add all ingredients to a blender. Cover and puree on high speed. Drizzle in cold water to reach desired consistency, about 1/4 cup.
3 Use immediately or store in a sealed jar in the refrigerator for 3 to 4 days.
