This gluten-free wrap features romaine leaves stuffed with bell pepper strips, asparagus spears, brown rice and sliced turkey. Don’t have cooked rice on hand? Feel free to make it from scratch, but be sure to add extra water. Stickier rice binds together and is less likely to spill out of the wraps.
INGREDIENTS

4 leaves Romaine Lettuce

1 medium raw Roma Tomato

1/2 medium red bell pepper

10 spears cooked asparagus
-
1/2 tbsp Mayonnaise
-
1/2 cup cooked brown rice
-
1/2 lb Turkey, whole, meat and skin, cooked, roasted
DIRECTIONS

Slice off the ends of the romaine leaves and pat dry.

Smear mayonnaise on the center of each leaf.

Place a spoonful of brown rice over the mayo on the center of each leaf.

Place slices of turkey over each mound of rice.

Place strips of red pepper, tomato, and asparagus spears horizontally across each leaf.

Roll up the leaves to make a cylinder. It’s okay if the asparagus spears stick out.

Slice in half and serve.
