These pancakes are actually loaded with antioxidants from cocoa powder, potassium from banana and protein from eggs.
INGREDIENTS

1 banana

1 1/2 tbsp Unsweetened Cocoa Powder

2 egg(s)

1/4 tsp peppermint extract

1 pinch sea salt

TIP: Make sure banana is ripe!

In a medium bowl, fully mash the banana with a potato masher or fork. Add the cocoa powder and stir until evenly combined. Add the eggs, peppermint extract, and salt and whisk until well combined.

Spritz a large nonstick (PFOA-free) skillet (or griddle) with cooking spray and heat over medium-low. In batches, ladle the batter onto the skillet, about 1/4 cup per pancake. Cook until browned, about 3 1/2 minutes per side.
