This high-protein, gourmet grilled cheese sandwich recipe features Gruyere cheese and a poached egg for 28 grams of protein per sandwich.
INGREDIENTS

4 cups Baby Spinach Organic

2 tsp 100% Lemon Juice

1/4 tsp sea salt

1 pinch Organic Ground Cayenne Red Pepper

1 tbsp Butter, Unsalted

6 oz Switzerland Gruyere Cheese

8 whole-grain bread slice(s)

4 Poached Egg

Toss together the spinach, lemon juice, salt, and cayenne in a large bowl; set aside.

Heat a large (eco-friendly) nonstick skillet or sauté pan over medium heat. Thinly spread one side of each bread slice with the softened butter. In batches, place 4 slices buttered-side down in the pan and top each with 1 slice cheese, 1/2 packed cup of the fresh spinach mixture, and 1 poached egg. Top with the remaining spinach, sliced cheese, and bread slices, buttered-side up.

In batches, grill sandwiches until cheese melts and bread is well toasted, about 2 to 2 1/2 minutes per side, carefully turning sandwiches once during grilling. Cut in half diagonally, and serve.
