This breakfast is a twist on the classic duo of bacon and eggs and really, you can enjoy this dish any time of day.
INGREDIENTS

2 slice Uncured Bacon

4 Plum Tomato

2 Hard Boiled Eggs

2 tbsp Spring Herb Vinaigrette
DIRECTIONS

Cook the bacon in a skillet over medium until crisp. Drain. Chop or crumble into bits.

Arrange the tomatoes on a platter.

Sprinkle with the eggs. Drizzle with the vinaigrette. Sprinkle with the bacon bits.

Season with sea salt and freshly ground black pepper to taste.
