This is a quick delicious addition to any meal. Heck its a meal in itself.
INGREDIENTS
SERVES 4

1 1/4 lb Eggplant [medium]

1/4 tsp Salt

2 second All Natural Extra Virgin Olive Oil Non-stick Cooking Spray

2 tbsp Balsamic Vinegar
-
1 1/2 oz Parmesan Shaved Cheese
DIRECTIONS

Turn on Broiler.

Rinse eggplant and slice into 1/3 inch slices.

Place slices on paper towel and sprinkle with salt. Let stand 10 minutes. Press the top of the eggplant to remove moisture and salt.

Repeat on other side.

Prep baking sheet with foil and non-stick spray.

Drizzle the tops of the eggplant with the balsamic vinegar.

Broil 5 min or until brown on each side.

When second side is completed, sprinkle with the Parmesan cheese.

Back into the broiler for 2 minutes.

Remove and let cool for 3-5 minutes.
