Easy Pan-Seared Scallops

Fish cooks more quickly than beef or chicken and are an equally great source of protein, so consider fish when in a hurry. Recipe courtesy of dietitian Cassie Bjork: http://www.dietitiancassie.com/

INGREDIENTS

SERVES 1

  • 4 oz scallops
  • 3 tsp Olive Oil
  • 1 pinch Salt
  • 1 pinch Black Pepper

DIRECTIONS

1 Remove the muscle from the scallops and rinse with cold water. Thoroughly pat the scallops dry.
2 Add the oil to the pan and place on high heat.
3 Season the scallops with salt and pepper.
4 Once the oil begins to heat up, add the scallops to the pan.
5 Sear the scallops for approximately 1 1/2 minutes on each side. The scallops should have a small golden crust on each side while still being translucent in the center.
