This tuna salad is filled with nutritious veggies and the flavors of the Mediterranean.
INGREDIENTS
SERVES 1

6 oz chunk lite tuna (in water)

1 tsp capers
-
2 celery stalk(s)

1 carrot(s)

1/4 lemon
-
2 cups chopped romaine lettuce
-
2 tbsp low-fat feta cheese
-
1 tsp balsamic vinegar
-
6 gluten-free crackers
DIRECTIONS

Drain water from can of tuna. Place in bowl with capers, chopped celery and carrots.

Squeeze lemon in bowl and mix in tuna.

Place mixture on bed of lettuce and top with feta cheese and balsamic vinegar and olive oil.

Serve crackers on side.
