Forget mashed potatoes. Creamy Parmesan Cauliflower Puree is just as rich and satisfying without all of the excess fat and carbohydrates of traditional mashed potatoes. A food processor will help you to achieve a perfectly creamy puree. Serve this high quality vegetable with a protein like roasted chicken or even filet mignon for a balanced meal.
INGREDIENTS

1 serving Cauliflower Head Large

1 tsp Thyme, Fresh

1/4 cup Shaved Parmesan Cheese

1 tbsp LEMON Juice, Fresh Squeezed

1 tbsp extra-virgin olive oil

3 pinch sea salt

2 dash Pepper, White
DIRECTIONS

Steam cauliflower until very soft. Drain well.

Pulse cauliflower in a food processor until it breaks down into tiny pieces.

Add cauliflower, fresh thyme, Parmesan cheese, fresh lemon juice and extra virgin olive oil and pulse until smooth and creamy.

Season well with salt and white pepper to taste. Enjoy!
