INGREDIENTS

2 1/2 cups low-sodium vegetable broth

3/4 tsp fresh rosemary

1/2 tsp sea salt

1 cup Rolled Oats Organic Old Fashioned

2 tsp Lemon Juice
-
2 cups Mixed Vegetables

2 oz Soft Goat Cheese
DIRECTIONS

Bring the broth, rosemary, and salt to a boil in a medium saucepan. Reduce heat to medium, add the oats, and stir until fully cooked, about 5 minutes.

Add the lemon juice, oil, and grilled vegetables (such as leftover grilled zucchini, yellow squash, bell peppers, red onions, and/or mushrooms) and stir until heated through.

Remove from heat, add the goat cheese (or soft vegan cashew cheese), and stir until creamy.

Transfer to bowls and serve.
