This is one of those recipes that requires you to exercise good judgment. While the low-fat cream cheese and turkey bacon make them much healthier for you than they would otherwise be, they are certainly rich. So make just enough to serve one or two peppers per person.
INGREDIENTS

4 slice Turkey Bacon

4 oz Low Fat Cream Cheese

1/2 cup Onions, Spring Or Scallions

20 leaf fresh mint leaves

1/2 cup Parsley

1/4 tsp Sea Salt

1/4 tsp Ground Black Pepper

5 piece Grilled Piquillo Peppers
DIRECTIONS

Preheat oven to 375 degrees Fahrenheit.

Place layer of bacon on a cookie sheet lined with parchment paper in a sheet pan for 15 minutes (or until completely crispy). Remove and reserve, then crush or chop into small bits.

In a large bowl add cream cheese, spring onions, mint, parsley, salt, pepper and ¾ of the bacon bits. Mix with a spoon using the back of it to combine if the cream cheese is thick.

Place the cream cheese mixture in a sealable bag, placing as much has possible in the corner of the bag.

Cut off the tip of the bag and squeeze the cream cheese into each pepper.

Sprinkle the remaining bacon bits on the exposed cream cheese and serve.
