Sometimes chicken salad contains fruit, including grapes or raisins. For this version you’ll simply smear whole-berry cranberry sauce onto whole-grain slider rolls. Then, you’ll sprinkle with heart-friendly pistachios and stuff with an easy homemade chicken salad made with rotisserie chicken breast.
INGREDIENTS
SERVES 10

3 cups Chicken Breast, Skinless, Rotisserie Roasted, 1 Oz.

1/2 cup Mayonnaise

3 medium scallions

3/4 tsp Rosemary, Dried

10 Sliders Mini Buns
-
3/4 cup Whole Berry Cranberry Sauce

1/4 cup Roasted & Salted Shelled Pistachios
DIRECTIONS

In medium bowl, combine chicken, mayonnaise, scallions, and rosemary (or tarragon). Season well with salt and pepper to taste.

Split the rolls. Stuff with cranberry sauce, pistachios (or sliced toasted almonds), and chicken salad.

Insert party picks to serve, if desired.

Note: If unable to find slider rolls, serve in mini rye or pumpernickel bread slices.
