Chocolate-Mint “Energy Ball” Truffles

These minty truffles have a creamy filling that consists of cocoa powder, almond butter and black beans. Yep, black beans, those fiber-filled legumes! But the main ingredient in these “energy balls” is raw shelled hemp seeds, which provide plant-based protein.



  • 3/4 cup Black Beans, No Added Salt
  • 1 cup Hemp Seed, Raw Shelled
  • 1/4 cup Almond Butter, Creamy
  • 1/4 cup Cocoa Powder, Natural Unsweetened
  • 1/4 cup Coconut Nectar
  • 1 1/2 tsp Coconut Oil, Virgin Unrefined
  • 1 1/2 tsp Pure Vanilla Extract
  • 1/2 tsp peppermint extract
  • 1/4 tsp Sea Salt


1 Rinse and drain beans well. Add well-drained beans, 1/3 cup of the hemp seeds (hemp hearts), the almond butter, cocoa powder, coconut nectar (or honey), coconut oil, vanilla extract, peppermint extract, and salt to a food processor. Cover and puree until creamy, about 1 1/2 minutes. Add another 1/3 cup hemp seeds and pulse a few times to evenly combine.
2 Transfer mixture to a medium bowl. Chill in the refrigerator to allow mixture to firm, about 1 hour.
3 With clean hands, form mixture into 16 balls, 1 rounded tablespoon each.
4 Add remaining 1/3 cup hemp seeds to a small bowl; roll the truffles in the hemp seeds to fully coat.
5 Store in the refrigerator. Box up as desired for gifting, keeping chilled.
