Here’s a cookie that’s good for your heart and mood, thanks to the dark chocolate in which it’s dipped. Dark chocolate can raise HDL (“good”) cholesterol while lowering LDL (“bad”) cholesterol, which is important for heart disease prevention. And dark chocolate also contains the chemical serotonin, which acts as an antidepressant.
INGREDIENTS

1 cup Oat Flour

1/4 tsp Sea Salt

1/4 cup Arrowroot Powder

1/4 cup Safflower Oil

1 cup Raw Honey
-
1 tsp Pure Vanilla Extract

2 1/2 cups Baking Chips, Semi-Sweet Chocolate, Mini
DIRECTIONS

Preheat oven to 350 degrees Fahrenheit.

Melt the chocolate by microwaving in 20 second increments, stirring in between.

Mix the flour, salt and arrowroot powder in a mixing bowl.

Mix the oil, honey and vanilla in another bowl.

Combine the wet ingredients with the dry ingredients and drop by the spoonful onto parchment-lined baking sheets.

Bake for 8 to 10 minutes, or until just golden brown.

Melt the chocolate chips in a saucepan over low heat.

To speed the chocolate hardening, place in the fridge or freezer for a few minutes.
