1 whole-wheat English muffin

1/2 cup low-fat cottage cheese
DIRECTIONS

Place egg in a small saucepan and cover with cool water by one inch. Over medium heat, bring water to a boil. Once water begins to boil, cover and remove from heat. Let sit for about 5 min and then run under cool water.

Peel and slice egg, and toast English muffin.

Spread cottage cheese on English muffin.

Layer egg on top of cottage cheese.
