Many health conscious eaters looking for lower carb alternatives to starchy grain dishes will be delighted to learn that “ground” cauliflower is a fantastic substitute in dishes that call for rice or even couscous.
INGREDIENTS

1 Cauliflower (raw), Medium Head

2 tbsp extra-virgin olive oil
DIRECTIONS

Chop cauliflower into smaller florets.

Add cauliflower to food processor and pulse florets until finely chopped. Be careful to not over process making cauliflower mushy. This may need to be done in manageable batches.

Heat olive oil in a large pan over high heat and add cauliflower. Heat until the cauliflower begins to brown in places.

Season with salt and pepper to taste.
