The “dough” can be baked into patties until crisp, or grilled on a skillet laced with olive oil.

1 Cauliflower (medium)

2 egg(s)

1 garlic clove

3 oz fresh part-skim mozzarella cheese

1 dash salt and pepper
DIRECTIONS

Preheat oven to 450 degrees.

Chop the cauliflower into florets, removing the thick, green center stem.

Place the cauliflower into a food processor and process until it's a mashed potato texture.

Next, microwave the cauliflower until soft - about 3-5 minutes.

In a bowl, combine cauliflower with eggs, garlic, cheese, salt and pepper.

Coat a baking pan with spray oil and form bread into the shape you're looking for.

Bake for 25 minutes or until bread begins to brown.
