1 lb Carrots

1 tbsp Olive Oil, Extra Virgin

1/2 tsp Sea Salt

1/2 tsp Ground Black Pepper

1/4 cup Parsley, Raw Fresh

1/4 cup Parmesan

2 tbsp Tahini Sesame Paste

1 tbsp Lemon Juice

1/2 tsp Garlic Powder
DIRECTIONS

Preheat oven to 400°F.

Slice off the carrot top and bottom, peel and cut into thin slices.

In a large bowl, toss carrot slices with olive oil, salt, 1/8 tsp pepper, parsley and parmesan.

Spread carrots on a baking sheet and bake for 15 to 20 minutes.

To make the dipping sauce, mix tahini, lemon juice, garlic powder and remaining pepper in a small bowl.
