This simple Italian salad is a delicious low-carb, high-protein lunch. Traditionally, Caprese salad has no vinegar, but many people prefer it with the tart addition of balsamic or red-wine vinegar.
INGREDIENTS

1 cup Cherry Tomatoes

1/3 cup Ciliegine

1/4 cup Basil, fresh

1 tbsp olive oil

1 tbsp Balsalmic Vinegar

1/2 tbsp lemon zest

1/4 tsp Salt

1/4 tsp Pepper, Black
DIRECTIONS

Mix the olive oil and balsamic vinegar with salt and pepper; pour dressing into the bottom of a Mason jar.

Add the cherry tomatoes then half of the shredded basil. Add the mozzarella balls, and then top with the remaining basil and lemon zest.

Seal until ready to eat.

Notes: You can substitute the balsamic vinegar with red wine vinegar.
