You’ll have some time to do yoga while your meal is simmering on the stovetop — and wafting a glorious ginger fragrance throughout the room. After enjoying this plant-based dinner in a bowl, you’ll be feeling rather Zen.
INGREDIENTS

1/3 cup Brown Rice, Medium-grain, Uncooked

1/4 cup Organic Unsweetened Coconut Milk

1 tbsp Fresh Ginger Root

1 tbsp Tamari Soy Sauce
-
1 tsp honey
-
8 oz Cut Green Bean
-
1 red bell pepper
-
2 tbsp Basil, Fresh
DIRECTIONS

In a large saucepan, stir together the rice, 2/3 cup cold water, the coconut milk, ginger, soy sauce, honey, green beans and bell pepper. Bring to a boil over high heat. Reduce heat to low and simmer until the rice is just cooked through, about 50 minutes.

Remove from heat and let stand covered for 10 minutes to complete the cooking process.

Serve immediately. Top with basil at serving time.
