Cashew Alfredo tastes like much more than the sum of its parts, and it’s a great alternative for people who want a creamy sauce free of wheat and dairy. The onion and garlic powders are what add taste and flavor to the Alfredo sauce, so don’t skip those ingredients! Steamed broccoli gives this dish a “loaded baked potato” feel and provides vitamin K, folic acid and collagen-boosting vitamin C.

INGREDIENTS

SERVES 4

  • 2 medium cooked sweet potato
  • 2 cups Steamed Broccoli
  • 3/4 cup raw cashews
  • 2 cups Water, tap, well
  • 3/4 cup Water, tap, well
  • 1 tbsp lemon juice
  • 1 tbsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/2 tsp Garlic Salt
  • 1/4 tsp Pepper, Coarse Black

DIRECTIONS

1 Soak cashews in hot water for at least one hour, up to eight hours
2 Strain water from cashews and rinse them
3 Make sure your sweet potatoes are cut into 1/4 strips and roasted for 25-35 minutes until crispy
4 In a blender, blend cashews, fresh water, and seasonings; add more water 1 tbsp at a time if needed to achieve a creamy, sauce-like consistency
5 Place fries on a platter and pour sauce over them, then top with broccoli
