Breakfast food isn't just for mornings. Mix it up and have your eggs for dinner. Eggs are high in protein, and they provide iron, vitamin D and two nutrients that support eye health, lutein and zeaxanthin.
INGREDIENTS

2 Egg

2 tbsp Milk

1/4 cup Peppers, Sweet, Red

2 tbs Chopped Onion

1 dash Salt

1 dash Pepper*

1/2 Tomato, Small
DIRECTIONS

In a small bowl, combine the eggs, milk, red pepper, onion, salt and pepper.

Heat a lightly greased pan over medium heat.

Pour mixture into pan and cook until eggs are almost set; then add tomato.

Cook until eggs are set and cooked all the way through.
