These energy-boosting, blueberry-filled bites are perfect for an on-the-go snack. Blueberries are an excellent source of vitamin C, an antioxidant that may help to prevent or delay certain cancers. They also contain fiber, which helps to keep you full throughout the day.



  • 2 cups Gluten Free Oats, Old Fashioned
  • 1/2 cup Almonds
  • 1/8 tsp Sea Salt
  • 1/2 cup Pitted Deglet Noor Dates
  • 2 tbsp Coconut Oil
  • 2 tbsp Maple Syrup
  • 1/2 tsp Pure Vanilla Extract
  • 1 cup blueberries


1 Preheat oven to 350 degrees.
2 In a food processor, combine 1 cup of oats, the almonds, and the salt. Process these ingredients until the oats reach a sandy consistency.
3 Add the dates, coconut oil, maple syrup, and vanilla extract. Process for another 30 seconds.
4 Transfer the mixture to a new bowl and gently fold in blueberries and the remaining 1 cup of oats. Mix until sticky and combined. The bars will take on a purple hue.
5 Press the mixture down in a parchment covered 8x8 square pan, and bake for 20 to 25 minutes.
6 Cool completely before cutting into bars. For rapid cooling, transfer directly to the freezer for about 15 minutes.
