1 cup Salsa, Tomatillo

4 oz Tortilla Chips, Baked, Yellow Corn

15 oz Beans, Black

1/3 cup low-fat cottage cheese

1 medium avocado

3 tbsp Red Onion

2 tbsp Cilantro

Add the salsa to a large skillet over medium-high heat and bring to a simmer while stirring. Add the tortilla chips and gently toss with tongs until coated with the salsa and slightly softened, about 2 minutes. Fold in the black beans until heated through, about 1 minute.

Transfer to individual bowls or plates. Dollop with the cottage cheese. (Hint: Alternatively, sprinkle with crumbled queso blanco or Cotija cheese for authenticity.) Sprinkle with the avocado, onion, and cilantro.
