Replacing cream cheese with mashed avocado and substituting a whole-grain English muffin for a bagel, gives you a delicious, nutrient-dense breakfast with staying power.

1 Whole Grain English Muffins

1/2 medium avocado

1/2 tsp Pure Lemon Juice

2 slice of Tomato

1 dash salt and pepper
DIRECTIONS

Toast English muffin. While muffin is toasting, mash the half avocado with lemon juice.

Once toasted, top each English muffin half with avocado and place a tomato slice on top. Sprinkle with a dash of salt and pepper.
