Coleslaw is a standby salad that’s often served, though not always loved. So here’s a slaw that’s been given a worldly makeover.

INGREDIENTS

SERVES 4

  • 2 cups Cole Slaw (shredded Veggie Mix)
  • 1/2 fruit lime
  • 1 tbsp Coconut Nectar, Organic
  • 1 tbsp Sesame Oil
  • 2 tbsp Teriyaki Sauce
  • 3 medium scallions
  • 2 tbsp mint leaves
  • 1 oz Peanuts, virginia, raw

DIRECTIONS

1 Whisk together the lime juice, coconut nectar (or honey), oil, and teriyaki sauce in a large bowl.
2 Add the cole slaw mix (or shredded cabbage), scallions and mint; toss to coat.
3 Taste and add extra lime juice if desire more tanginess.
4 Sprinkle with the peanuts. Serve immediately.
