Acorn Squash with Honey Butter and Dried Cherries

Both easy to prepare and gorgeous, Roasted Acorn Squash with Honey Butter & Dried Cherries is the perfect dish for entertaining. Just double the recipe for a bigger crowd. Serve with your favorite protein for a balanced meal.

INGREDIENTS

SERVES 4

  • 1/4 second Original No-Stick Cooking Spray
  • 2 Whole Acorn Squash
  • 2 pinch Sea Salt, Coarse, Mediterranean
  • 2 tbsp Butter
  • 1 1/2 tbsp Honey
  • 3 leaf fresh sage leaves
  • 2 tbsp dried cherries

DIRECTIONS

1 Preheat oven to 400 degrees. Cut acorn squash in half length wise with a large, sharp knife (Chef’s tip: slice next to the stem, not through the stem, for easier cutting). Using a spoon, remove the membrane and seeds from the inside of the squash (Chef’s tip: For a quick snack for later, rinse and dry the acorn seeds. Season them with sea salt and your favorite spices like cumin, paprika and garlic and roast them at 350 degrees until lightly browned).
2 Spray the bottom of sheet pan with fat free cooking spray. Spray the inside of each squash lightly with cooking spray. Season each acorn squash with a pinch of sea salt. Place the acorn squash halves sliced side down on the baking sheet. Roast for 30 to 35 minutes until the sliced side of squash is caramelized.
3 Remove squash from oven and carefully flip acorn squash halves so that the sliced side is facing up. In a small bowl, microwave butter until melted (15 to 20 seconds).
4 Stir in honey, salt, chopped sage and dried cherries. Using a spoon, divide the honey butter and cherry mixture onto each squash, making sure to get some on the edges and the middle.
5 Bake another 15 minutes or until caramelized, making sure to baste with butter from the middle of each squash at least once.
6 Serve and Enjoy!
