This quick salad bursts with tomatoes, which are rich in immunity-boosting vitamin C and beta carotene. The lime and hot pepper provide vitamins A, K and C. You can even count a quarter-cup of fresh salsa as one of your four daily servings of vegetables.
INGREDIENTS

8 Campari Tomatoes

1/2 medium red onion

1 clove garlic

1 yields lime juice

1/2 peppers Jalapenos

1/8 tsp Sea Salt

1/4 tsp Ground Black Pepper

Toss tomatoes, onion, garlic lime juice, ¼ jalapeno, cilantro, salt and pepper in a blender. Pulse 3-4 times to your desired level of chunkiness.

Test the heat level and add the rest of the jalapeño if it needs more zip. Adjust seasoning and serve.
